Ingredients
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ cup unsweetened shredded coconut
- ½ cup butter (softened)
- ¾ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup coconut milk
- ½ cup Flavors of Quezon coconut jam (plus extra for topping)
- Extra shredded coconut for garnish

- Set your oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and shredded coconut.
- In a large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix in the coconut jam until well incorporated.
- Gradually add the flour mixture to the wet ingredients, alternating with the coconut milk. Mix until smooth.
- Pour the batter into the prepared cake pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
- Spread an additional layer of coconut jam on top of the cooled cake. Sprinkle extra shredded coconut for garnish.
- Slice and enjoy!
