Otap Tiramisu Recipe

Kapeng Barako (Ground Coffee) 250g


Ingredients


2 cups cream cheese, softened 

½ cup sugar 

¼ tsp salt 

2 cups whipping cream 

2 cups Nayong Kalikasan Barako coffee 

2 dozen otap Cocoa powder, for dusting



Preparation


Directions

Prepare the cream cheese layer:

  • In a mixing bowl, combine the cream cheese, sugar, and salt.
  • Using a hand mixer, whip on low speed, scraping down the sides of the bowl, until smooth and creamy, about 5 minutes.
  • Add the whipping cream, increase the speed to medium, and whip to medium peaks.
  • Set aside in the fridge until ready to use.

Assemble the tiramisu:

  • Prepare a 9x13-inch serving dish.
  • Pour the coffee into a wide, shallow bowl.
  • Dip the otap into the coffee and let soak, flipping once, until moist but not soggy.
  • Arrange the soaked otap in a single layer at the bottom of the serving dish, breaking or overlapping pieces as necessary.
  • Spread half of the cream cheese mixture in an even layer over the otap.
  • Dust a thin layer of cocoa powder over the cream.
  • Repeat with the remaining otap, coffee, cream cheese mixture, and cocoa powder (make the top layer of cocoa powder a little thicker).

Refrigerate:

  • Cover the tiramisu with plastic wrap and refrigerate for at least 3 to 5 hours.
  • Slice into squares, then dust with a fresh layer of cocoa powder on top before serving.
