Peanut Butter Coffee Tiramisu Recipe

Sometimes, a timeless menu item deserves its own twist too! For today’s recipe, we are revamping the famous Italian coffee-dessert, tiramisu, by incorporating the cozy flavor of peanut butter and using a unique alternative to ladyfingers typically used in the classic recipe.

Coffee and peanut butter mixed together is imaginably heaven in taste with sweet, nutty flavors seamlessly blending with the strong notes of coffee. This version will use Zappuro Pili Peanut Butter by Zappuro Food Products — a much healthier alternative not only to chocolate spreads but to other types of peanut butter, due to its use of pili nuts and absence of oil.

Another substitute, this one for ladyfingers, is Otap by Mazapan Sweets Bakery of Flavors of Quezon. Otap is an oval-shaped puff pastry cookie from the Philippines, especially common in Cebu where it originated. It’s a well-loved food for people of all ages — from kids craving an afternoon snack to grandparents who’d rather have it with coffee than a full carb meal.

Follow the recipe below to make your very own Peanut Butter Coffee Tiramisu!


Ingredients

5.3oz Zappuro Pili Peanut Butter

1.5 tbsp Instant Coffee

¼ cup Boiling Water

7oz Mazapan Sweets Bakery Otap, ground into fine crumbs

2.1oz Powdered Sugar

8.8oz Mascarpone Cheese

7oz Peanuts


Preparation

Directions

  • Dissolve the instant coffee in boiling water. Stir well to make a strong coffee mixture and set aside to cool.
  • In a large mixing bowl, whisk the mascarpone cheese with powdered sugar until smooth and creamy. Once the coffee mixture has cooled, fold it into the mascarpone mixture, mixing gently to combine.
  • Grind the otap into fine crumbs using a food processor or by hand in a plastic bag with a rolling pin.
  • In a serving dish, begin with a layer of cookie crumbs at the bottom.
  • Drizzle some of the coffee mixture over the crumbs to moisten them slightly.
  • Pipe or spoon a layer of the mascarpone filling over the crumbs.
  • Repeat the layers until you use all the crumbs and filling, finishing with a layer of the mascarpone mixture on top.
  • Add the peanut butter and peanuts.
  • Pipe the peanut butter over the top of the tiramisu in swirls or lines.
  • Sprinkle the crushed peanuts evenly over the top for added crunch and flavor.
  • Refrigerate the tiramisu for about 40 minutes to allow the flavors to blend together,
  • Once chilled, serve the tiramisu cold, garnished with extra crushed peanuts if desired.
