Fried rice is one of those quick and easy meals you can never go wrong with during busy days. It has a very flexible recipe that lets you add any ingredient depending on preference, so best believe that you can turn whatever groceries you have in the fridge into a unique and fresh hot bowl of fried rice.
This Taiwanese Fried Rice recipe is no different except for one key ingredient that makes it taste authentic as it came straight from the origin: Taiwanese sausages. Make sure to source from shops that cater authentic Chinese delicacies like Wei Ming Dian to guarantee an original flavor!
2 pieces Wei Ming Dian Taiwanese Sausages
3 cups cold cooked rice
1 ½ cups cabbage, diced into 1/4" pieces
½ cup onion, diced into 1/4" pieces
2 tablespoons soy sauce
½ teaspoon ground white pepper
4 cloves garlic, minced
3 sprigs green onion, sliced
2 Graise Farm duck eggs (or 3 chicken eggs)
3 tablespoons Graise Farm lard or neutral oil (such as canola)

Directions
1. In a pan, cook the thawed Taiwanese sausages with ½ cup of boiling water, covered, on high heat for about 6 minutes. Strain and reserve about ¼ cup of the sausage water, then dice the sausages into ¼" cubes.
2. Crack and beat the duck eggs in a bowl with a small pinch of salt.
3. In a wok or non-stick pan, heat 2 tablespoons of lard over medium heat. Add the diced Taiwanese sausage and stir-fry until golden on the edges. Remove the sausage from the wok and set it aside.
4. Using the same wok, turn the heat to high. Add the beaten eggs and then the cold rice on top. Flatten the mixture with a spatula, breaking up any lumps. If needed, add an extra tablespoon of lard around the edges.
5. Pour the soy sauce around the edges of the wok, one tablespoon at a time, and mix well. Add a pinch of salt, white pepper, the cooked sausage, onion, and cabbage. Stir-fry on medium heat, breaking up any remaining lumps and ensuring the steam can escape.
6. Once the rice mixture feels drier after the vegetables have released their steam, add the reserved sausage liquid 2 tablespoons at a time to let it absorb fully after each addition to keep the rice fluffy.
7. Add the minced garlic and stir-fry for about 10 seconds, just until it no longer smells raw.
8. Taste the rice and add more salt if needed. Then, stir in the sliced green onions, turn off the heat, and your fried rice is ready to serve.
